The company's product was called the Juicero Press, a Wi-Fi connected device that used single-serving packets of pre-juiced fruits and vegetables sold exclusively by the company by subscription. The San Francisco-based firm received $120 million in startup venture capital starting in 2014 from investors including Kleiner Perkins and Alphabet Inc.[1]

On September 1, 2017, the company announced that it was suspending sales of the juicer and the packets, repurchasing the juicer from its customers and searching for a buyer for the company and its intellectual property.[2][3]

Juicero was founded in 2013[4] by Doug Evans, who served as CEO until October 2016, when former president of Coca-Cola North America Jeff Dunn took over the position. The company's juicing press was originally priced at $699 when launched in March 2016,[5] but was reduced to $399 in January 2017, 12 to 18 months ahead of schedule, in response to slow sales of the device.[6]

Produce packs for the press, containing blends of pulped fruits and vegetables,[7] cost between $5 and $7[6] and had a limited lifespan of about 8 days.[8] Each pack had a QR code which was scanned and verified by the Internet-connected machine before it could be used.[5] CEO Jeff Dunn claimed this was to prevent packs from being used past their expiration date, and to facilitate food safety recalls, though critics felt that the feature was a form of digital rights management as it would prevent operation of the press with any produce pack not made by the company.[9] Industrial design for the press was completed by Yves Behar's studio Fuseproject, based in San Francisco.[10]

Controversies[edit]

In 2017, Juicero was the target of widespread criticism when Bloomberg News published a story suggesting that the company's produce packs could be squeezed by hand easily and effectively, and that hand-squeezing produced juice that was nearly indistinguishable in quantity and quality from the output of the company's expensive Press device.[11] The company defended its product and its process, claiming that squeezing packs by hand created undue mess and promoted a poor user experience, and later offered full refunds to any customers dissatisfied with its Press device.[12][13]

After taking apart the device, venture capitalist Ben Einstein considered the press to be 'an incredibly complicated piece of engineering', but that the complexity was unnecessary and likely arose from a lack of cost constraints during the design process. A simpler and cheaper implementation, suggested Einstein, would likely have produced much the same quality of juice at a price several hundred US dollars cheaper.[7][14][15]

Juicero filed a complaint in federal court in April 2017 against a competing cold-press juicing device, the Froothie Juisir, for allegedly infringing its patent and copying Juicero's trade dress.[16]

Making Jelly without Added Pectin

Use only firm fruits naturally high in pectin. Select a mixture of about 3/4 ripe and 1/4 underripe fruit. Do not use commercially canned or frozen fruit juices. Their pectin content is too low. Wash all fruits thoroughly before cooking. Memory clean monitor and free up memory 6 0. Crush soft fruits or berries; cut firmer fruits into small pieces. Using the peels and cores adds pectin to the juice during cooking. Add water to fruits that require it, as listed in the table of ingredients below. Put fruit and water in large saucepan and bring to a boil. Then simmer according to the times below until fruit is soft, while stirring to prevent scorching. One pound of fruit should yield at least 1 cup of clear juice. Table 1 recommends process times for jelly without pectin made in a boiling water canner.

Extracting Juices and Making Jelly

When fruit is tender, strain through a colander, then strain through a double layer of cheesecloth or a jelly bag. Allow juice to drip through, using a stand or colander to hold the bag. Pressing or squeezing the bag or cloth will cause cloudy jelly.

Using no more than 6 to 8 cups of extracted fruit juice at a time, measure fruit juice, sugar, and lemon juice according to the ingredients in the table and heat to boiling. Table 2 provides instructionsand proportions for extracting juice from jelly fruits. Stir until the sugar is dissolved. Boil over high heatto the jellying point. To test jelly for doneness, use one of the following methods.

Temperature test: Use a jelly or candy thermometer and boil until mixture reaches thefollowing temperatures at the altitudes in Table 3.

Sheet or spoon test: Dip a cool metal spoon into the boiling jelly mixture. Raise the spoon about 12 inches above the pan (out of steam). Turn the spoon so the liquid runs off the side. The jelly is done when the syrup forms two drops that flow together and sheet or hang off the edge of the spoon.

Remove from heat and quickly skim off foam. Fill sterile jars with jelly. For more information see 'Sterilization of Empty Jars'. Use a measuring cup or ladle the jelly through a wide-mouthed funnel, leaving 1/4-inch headspace. Adjust lids and process. Gopanel 2 web server manager 2 1 0.
